We marinade large Creedy Carver duck breasts in Cointreau, add our seasoning mixture and lay the breast on a slice of fresh orange, adding a special marmalade for that almost classic 1970’s duck a’ la orange flavour.
We wanted to produce a tender, moist eating yet beautifully pink cooked duck breast, so that chefs or cooks at home have no waste, great flavour, very very simple, just pan sear skin side down, flip the meat over and roast until still pink or medium, rest, carve, present and serve, its kinda that simple.
