What a cheek!!!

Ox cheek, also known as beef cheek, they are really on trend at the moment. They have been traditionally popular in ethnic and French cooking for many years, but they are just as at home in traditional British stews and casseroles alike, so we definitely wanted to add our versions to our grubworkz product list.

For those who don’t know the name Ox cheeks, refers to the facial cheek muscle of a cow. But please don’t be put off, because they are a great piece of meat, thick meaty, dense, finely grained with very little to almost no fat. Because they are such a lean almost fat free cut, when they are prepared incorrectly ox cheeks they can be too tough for some people. However when correctly prepared and ours are, ox cheeks are richly flavored, meaty, beautifully tender textured and delicious. A great winter dish for your menu or for that dinner party evening.

We marinate our grass fed ox cheeks simply in red wine, olive oil, our special seasoning mixture & crushed garlic. This produces a rich tasting product, totally encapsulated in red wine & olive oil for added moistness.

The reheat is very simple, requiring only an oven and pan, basted and roasted in your own jus/sauce or pull them, perhaps make them into a terrine or a trendy individual potato topped pie. Rich in flavour our ox cheeks can grace fine dining solutions, to gastro pubs, to office canteens, airlines, alike.

I’ve recently cooked the celebrity chef, Neven Maguire’s,“Braised Beef Cheeks with Roasted Garlic Mash recipe and needless to say, it was absolutely delicious. I was lucky enough to meet Nevan last year at the inagural Irish “Quality Foods Awards” in the elegant Mansion house in Dublin, as we are both judges.
