Chesil Smokery sits in the seaside town of Bridport in west Dorset. It is an artisan smokehouse which only uses oak and apple wood from British trees, specially graded to produce the optimum size of tiny chippings that suit their wonderful old smoker, along with a bit of peat for added flavour.
All their processes are, by and large, by hand. Finely tuned judgment when smoking is frequently called upon to finesse cooking and curing times.
Our chicken wings are cold smoked for 12 hours.
We then hand toss them together with our own recipe of Buffalo spice mix, then sous vide cook them until tender, all the juices, spices, and flavour encapsulated ready to crisp in the oven, BBQ or grill, then simply serve.
We are working with the quirky, eccentric and playful team at Cosy Club who offer fantastic informal casual dining, drinking and lounging in a family friendly environment.
For those who have never been, the interior of a Cosy Club is cosy (strangely enough)! Eras and styles clash in an eccentric, yet eclectic, fantasia. The furniture is a mixture of dining tables, battered old club chairs, and sleek vintage 1930s sofas. On the walls you’ll see oil paintings opposite banners, as well as portraits alongside flags. There’s also the occasional splash of taxidermy, and all sorts of unusual pictures and prints.
